Pasta all’amatriciana

Stupidly simple, only a few ingredients, but a bit of time, effort and love, and it’s tasty as all hell.

100g diced pancetta
2 x cans chopped tomatoes (If you can get some really good tomatoes like the Mutti ones, it actually does make a difference here)
60-70g fresh parmesan, grated
2 cloves garlic (fine chopped/grated)
Just the right amount of pasta – again, something a little premium works really well and does make a difference here. `
Salt/pepper

Fry off the pancetta, in a little oil if you want. Fry until it’s slightly crisp, then take out of the pan, leaving the fat in the pan.
Add the garlic into the pan, and fry off slightly. Add in tomatoes and turn down the heat, allow to simmer. Season and add the pancetta back.
Add grated parmesan to the pan, stir in. Taste for seasoning.
Put pan of water on for pasta, salt and allow to heat up and boil. Cook pasta as per instructions on the packet.
Stir pasta into sauce and serve.
