Makaronilaatikko (Finnish Macaroni Casserole)

This is never going to win beauty awards.

Until you eat the thing. And then it’s amazing.

Customise this to however you like. Add veg, different seasonings, different cheese, whatever the hell you want. Nobody is going to come after you for this!

5 dl Macaroni
400g Minced beef
1 large onion, finely diced
1 tsp salt
1 tsp curry powder
Pinch of pepper
1 tsp paprika
3 eggs
7 dl milk
Soft cheese (measure with your heart)

Cook the macaroni as per the normal way of cooking macaroni – cook until it’s slightly under, as this is going to be baked anyway. Once cooked sufficiently, drain and rinse under cold water to hopefully prevent sticking together!

Fry the onion and the mince off in a pan, draining the mince if necessary. Add the spices and seasoning. Mix the meat mix with the macaroni.

In a separate bowl, mix the eggs and milk together and whisk until combined.

Put the pasta and meat mix into a large ovenproof dish, and pour over the milk egg mixture.

Dot around lumps of soft cheese in the casserole mixture, wherever your heart leads you to. Top it with some more cheese if you want, I’m not the boss of you!

Bake in 200c electric (about 180c fan) for around an hour.
