Chicken Poke Bowl

When you fancy a pickie dinner but want some Asian food… A poke bowl is a great hit.

For the Chicken Marinade: (preferably to marinated for 30mins but if you’re short for time it’s fine)

  • 2 Chicken Breasts
  • 2 garlic cloves, crushed
  • 1 tablespoon ginger, grated (or use ginger paste or 1/2 teaspoon ground ginger)
  • 2 tablespoons white miso paste
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 2 tablespoons olive oil

Poke Bowl Toppings:
You can mix up your Poke Bowl toppings, some may include

  • Avocado Sliced
  • Spring Onions
  • Cucumber
  • Wakame Seaweed
  • Picked Ginger
  • Sesame Seeds
  • Crunchy Onions

METHOD

  1. Cook the Chicken with the marinade in the oven at 200° for 30 minutes or until cooked through.
  2. Cook the rice to your preference… Up to you 😇
  3. Chop up all the toppings and stack them ontop of all the rice. Place the chicken on and you’ll have a bowl of wonders.
