I found this absolute NOM of a recipe on an Ad for Quorn ‘sausages’… Thought I’d make a meaty twist on it…

- 1 pack Sausages
- 2 tbsp olive oil
- 2 large leeks, chopped
- 1 head broccoli, cut into small florets
- 250g of Orzo
- 800ml vegetable stock
- 100g low fat garlic and herb cream cheese
- Preferably, I would oven cook my sausages as I prefer them cooked that way, but if not: Heat a tablespoon of the olive oil in a large frying pan, add the Sausages and cook for 5-6 minutes all over until golden. Remove the sausages from the pan and chop into pieces.
- Heat the remaining oil in the pan and over a medium heat cook the leeks until wilted and tender, for about 4-5 minutes.
- Stir in the broccoli and cook for 3 minutes then add the orzo and vegetable stock and return the Sausage pieces to the pan. Toss everything together and simmer for about 10 minutes until most of the liquid has been absorbed by the orzo.
- Stir in the garlic and herb cream cheese and cook for a further 2 minutes. Serve ladled into bowls and enjoy!
