3 egg yolks
50g grated parmesan
2 x tubs (the M&S ones) Bacon lardons (or pancetta lardons)
1/2 – 3/4 pack Orzo
2 cloves garlic
Salt and Pepper to taste
Cook bacon lardons in a pan with a touch of oil until they’re cooked. Slightly crispy is the absolute peak here.
Whilst that’s cooking, grate the parmesan and mix with the egg yolks.
Add the garlic and fry off a little, take off the heat.
Cook the orzo in boiling, salted water for 8 minutes. Drain into another pan when ready – DO NOT DISCARD THE PASTA WATER!
Add the bacon and garlic mix to the orzo, mix.
Add the parmesan and egg mix to the orzo and mix thoroughly. Add in some pasta water to the mix to make it more “saucy”. Season to taste, but would advise plenty of black pepper, and only a touch of salt.
Serve. Obviously.
